Jalapeno / [hah-lah-PEH-nyoh]:
Fresh, favorite supermarket pepper in green and red; medium-hot; thick flesh; roast and use as seasoning; chop for fresh and cooked foods.

Jardiniére / [zhard-in-ey]:
A mixture of vegetables.

Julienne / [joo-lee-en]:
Potatoes, vegetables, or other items cut into thin strips; 1/8 inch by 1/8 inch by 1 inch to 2 inches is about standard.

Jus / [zhoo]:
The French word for "juice," which refers to either fruit and vegetable juices, as well as the natural juices from meat. A dish (usually meat) that is served au jus  is presented with its own natural juices.

Jus lié / [joos lee-ay]:
Meat juice thickened lightly with arrowroot or cornstarch.
